A savoury twist on a classic Easter favourite! These golden, buttery hot cross buns are packed with rich Cornish Blue cheese and fresh foraged wild garlic.
Wild garlic & Cornish blue hot cross buns

Step 1
Combine the flour, yeast, salt, sugar in a large bowl and gradually mix in the milk., melted butter and beaten egg. Mix with a dough hook or knead until you have a sticky dough. Then add in the wild garlic and blue cheese.
Step 2
Form into a ball and leave to prove in a warm place for 1 hour or until doubled in size.
Step 3
Divide the dough into fairly equal sized balls and shape into rolls. Place on a lined baking tray and leave to prove for 30-45 minutes.
Step 4
Preheat your oven to 200C and then make the flour and waster paste and pipe on top of the buns to form crosses.
Step 5
Bake for 30 minutes until golden. Allow to cool on a wire rack but brush with buttery maple glaze while they are still warm. Serve fresh with butter or toasted with extra blue cheese.

For the Hot Cross Bun Dough:
- 500g plain flour
- 7g dried yeast
- 1 tsp fine sea salt
- 250ml Trewithen Dairy Regen Milk
- 50g Trewithen Dairy butter, melted
- 1 egg, beaten
- 100g Cornish Blue cheese, diced or crumbled
- 50g wild garlic, finely chopped
For the crosses:
- 50g plain flour
- 50ml water
For the glaze:
- 50g Trewithen Dairy butter, melted
- 1 tbsp maple syrup
