Halloween Pumpkin Cake

Step 1
Pre heat oven to 180C/fan 160C/gas 4.
Step 2
Butter and line a 30 x 20cm baking tin with baking parchment.
Step 3
Mix the flour, sugar, spice, bicarbonate of soda, sultanas and salt in a large mixing bowl.
Step 4
In a separate bowl melt the butter and then beat in the eggs with a hand mixer. Add the orange zest and juice before adding to the dry ingredient mix.
Step 5
Stir until combined and then add the pumpkin.
Step 6
Pour the mix into the tin and bake for 30 minutes, or until golden and springy to the touch.
Step 7
For the topping mix the unsalted Trewithen butter with a hand mixer. Add the orange zest and juice before gradually adding the icing sugar. Mix until smooth and spreadable in texture.
Step 8
Spread over the cake when cool and enjoy.

300g light muscovado sugar
3tsp mixed spice
2tsp bicarbonate of soda
175g sultanas / raisins
1/2tsp salt
4 eggs beaten
200g Trewithen unsalted butter
Zest of 1 x orange
Tbsp orange juice
500g pumpkin grated
For the topping
200g full fat soft cheese
100g Icing sugar sieved
Zest of 1 x orange
Juice of ½ orange
