Flatbread with Yoghurt
Serves: 4 Prep Time: 10 mins Prep Time: 15 mins Prep Time: 25 minsIn a large bowl, combine the flour, baking powder, and salt. Mix well.
Add the yoghurt and olive oil to the dry ingredients.
Mix everything together with a wooden spoon until it starts to form a dough.
Turn the dough out onto a lightly floured surface and knead gently for about 1 minute until smooth. The dough should be soft but not sticky.
Divide the dough into 6-8 equal portions and roll each into a ball.
Dust your work surface with a little more flour, then use a rolling pin to roll each ball of dough into a thin round, about 2-3mm thick.
Heat a large frying pan or cast iron skillet over a medium heat.
Brush one side of a flatbread with a little olive oil and place it oil-side down in the hot pan.
Cook for 1-2 minutes until bubbles start to form on the surface and the underside has golden-brown spots.
Brush the top side with a little oil, then flip and cook for another 1-2 minutes.
Transfer to a plate and cover with a clean tea towel to keep warm while you repeat with the remaining flatbreads.
Serve warm. They’re best eaten fresh, but can be reheated in a pan or toaster.
